This stylish ramen shop is called 'Vegan Ramen UZU' and is located between Kyoto Gyoen National Garden and Kyoto Shiyakusho-Mae Station. It's a special place with a unique vibe that has been selected for 2022's Michelin Guide. The shop is located in a quiet street and stands out with its all-black exterior.  The façade has no windows, only a rectangular opening which is the entrance of which both walls, the ceiling and the floor is covered in wood panels that lead to a shiny glass door through which you can vaguely see the interior.

Passing through the glass door you will step inside a dark interior that is only illuminated by a large digital display in the back of the diner. The 'dining area' is completely black with a large reflective dining table in the middle with seats on the left and right side of the table. Both left and right walls behind the customers are covered by mirrors creating an infinity mirror effect. On the wall in the back of the room is a large display consisting of seven displays featuring a beautiful digital paintbrush stroke artwork by TeamLab accompanied by soothing music. Thanks to glossy table and the mirrors the reflection of the displays makes it all the more impressing without disturbing the zen atmosphere.

Uzu's menu offers 4 types of vegan ramen with soy sauce base as well as vegan sushi and even vegan mochi ice-cream for dessert. The noodles are made with wheat from Hokkaido and whole grain wheat from Aya city in Miyazaki prefecture. The food is carefully prepared and looks amazing.

Vegan Ramen Uzu Kyoto offers a unique experience with a great ambiance and fantastic food that not only looks great but also tastes great.  Even if you are not a vegan we highly recommend to visit this shop just for the experience.

京都御苑と京都市役所前駅の間にとてもスタイリッシュなラーメン屋Vegan Ramen UZU「ヴィーガンラーメン ウズ キョウト」にあります。独特の雰囲気で特別なお店ですが2022年のミシュランガイド京都・大阪+和歌山に掲載されました。お店は静かなエリアにあり、真っ黒な外観で結構目立ってます。外観には窓がなく、入り口は長方形の開口部になっています。入口の内側の壁、天井と床は全部木製のパネルで覆われてます。玄関と内観は光沢のガラス扉で分かれてる。

ガラス扉を通ると、食堂の後ろにある大きなデジタルディスプレイだけで照らされている暗い室内に足を踏み入れます。 「ダイニングエリア」は完全に黒で、中央に大きなダイニングテーブルがあります。テーブルの左側と右側に客席があります。客席の後ろの左右の壁は全面鏡で覆われて、素晴らしい無限の鏡の効果になってます。お客スペースの奥の壁には、7つのディスプレイで構成される大型ディスプレイでチームラボに作られた美しいデジタルペイントの動画が日本の音楽と共に流れています。

ウズのメニューには、醤油ベースのビーガンラーメンが4種類、ビーガン寿司とビーガンもちアイスクリームもあります。麺には、北海道産の小麦粉と宮崎県の綾町産の全粒粉を使われています。全部は丁寧に調理されて、とても見栄えです。

ヴィーガンラーメン ウズ キョウトはおしゃれな雰囲気とスタイリッシュで美味しい食べ物でとてもユニークな経験になります。ビーガンでなくても、非常におすすめなお店です。
